Crispy Fried Vegetables

My parents are diabetic, so I'll often make recipes The d(diabetic)Life Kitchen offers. This one is one of my favorites because it's quick, easy, delicious, and wholesome! I'm not a diabetic and love it!

I hope you enjoy it! And I'd love to hear your feedback if you try it!

Hi ML's! I know what you mean! Since I'm the closest to them, I've been in the thick of their diet and because my mother has a bad heart, she really has to watch!

I may have to give this a try. I love zucchini, but the rest of my family doesn't care for it. Maybe I could slip it past them this way!

It sounded great right up to the point where he dumped them into beaten egg! I wonder if there's any alternative for people who can't eat egg? I might try it for a dinner party though.
